After his culinary studies, George Palaiologos attended educational seminars and gained experience in a series of Athenian kitchens (Banana Moon, Casa di Pasta, Prytaneion etc.) and in restaurants of big hotels (Aquagrand Exclusive Deluxe Resort, Lindos Princess, Rodos Park Suites Hotels, Blue Bay Hotel, Divani Caravel etc.) He is a member of Chef's Club of Greece and is always informed of the culinary developments.
As an executive chef of the Lindian Village Resort, he is in charge of five restaurants with different cuisines: The “Basil” with contemporary Greek cuisine, the “Almante’s” with international, the “Kohilo” with Mediterranean, “Mr. Danton” with Thai cuisine and “Astroscopus” with seafood.
He is one of the most significant renovators of the Greek cuisine, received Toque d’Or and Greek Cuisine Award numerous times. With studies in Greece and France, where he had worked for six years, he started his career as chef in Crete: the local cuisine and its unique wild “horta” defined his path. He brought to the gastronomic forefront forgotten greens and delicacies and he took the Cretan “citizenship “, regarding his cuisine.
He had worked in big hotels and restaurants, in Greece and abroad, and today is the executive chef of the awarded “Ark” and the consultant chef at the "bluegr Hotels & Resorts”, while he is in charge for the “Elia” restaurant in Dubai.

A culinary trip to Asia makes the à la carte “Mr. Danton” with Thai food. The “Almante's”, the main restaurant of the resort, has an American breakfast buffet and serves international cuisine for dinner.
The resort is divided in three sections. The main, where the reception and the standard rooms are, has been decorated by Angelos Angelopoulos. A basic feature of the resort is the luxury suites, sorted by decoration. The suites “Bohemian Collection” have been added recently, in boho chic style with natural elements such as wood and rattan, in an open-plan setting, private verandas and pools with day beds, shaded with pergola. The Zen style dominates the “all suites” section, of the River Passage Suites. Here, all grounded suites-apartments include a garden and a pool, while the junior suites located on the 1st floor, have outdoor jacuzzi. Finally, the oriental style is the striking feature of sixteen luxury suites, the Ottoman Gardens, with pool and high aesthetic garden.
